I had a customer asking for these, and the only recipe I found was one where you leave them in the sun for 10-12 days covered with only a cloth covering them. Not exactly optimum health conditions. Has anyone made these before, and if you have how did you make them?
I have paraphrased the recipe method: slice limes into 8 wedges. Toast spices; fenugreek, mustard seeds, tumeric and chile powder, then grind. Put limes in jars and sprinkle spice mixture over. Add vegetable oil to cover and cover with a clean cloth. Place in sun for 10-12 days until limes have softened, then seal in jars. Does anyone else have any recipes for these? Thanks! Dawn
