Lime vs. Lemon

In general, when should one use lime instead of lemon and vice versa?
I have a lemon tree but no lime tree (too thorny). In Vietnamese cooking for example there's never a use of lemon (I've never seen a lemon tree in Vietnam). When I use it to make fish sauce mix known as Nuoc Cham, the lemon makes makes the sauce bitter after a while, but it's ok if I use up the sauce real fast, say within a couple of hours. I notice also that lime is used in salsa dip.

Just looking for ways to use my lemons instead of buying lime whenever possible...
