I found fresh lima beans at our farmer's market yesterday. Like many people, I thought *bleh*
However, the beans look terrific and it was the same farmer I buy fava beans from.
Suzanne Goin of Lucques restaurant had a recipe in the last issue of Food and Wine. Creamy bean flavor, sharp olive, salty cheese. (needed to add a little water to the mixture)
Wonderful appetizer at our dinner party last tonight. Tonight I am going to eat it with toast for a light dinner!
