If anyone wants a easy light dessert that's different for the holidays. I made this last year at Christmas because I could do it in advance.
It was extremely light, perfect after a heavy holiday meal. Plus I made it festive because it's in a ring shape, served with red berries and I added mint leaves.
Creamy Geletin Mould
1 cup white sugar
1 med size whipping cream carton
2 packets geletin (I use Knoxs)
1 cup warm water
1 Tbsp vanilla extract
1 large tub sour cream
Mix geletin into warm water in mixing cup. In the meantime dissolve sugar into whipping cream in med pot over medium high heat. Stir constantly so as not to burn. Once dissolved add geletin water and stir until heated through. Do not let it come to a boil. This should all take about 8 mins.
Let rest for 1 hour. Whisk in sour cream and vanilla until smooth. Pour into mould and let set in fridge. Serve with strawberry sauce and fresh berries.
