CCCs are one of the things that are off-limits to protein powder IMO. heres the recipe, its the closest i have come to mimicking the Levain cookie in NYC (which IMO is the perfect CCC) to this point.
2 sticks ‘cold and cubed’ unsalted butter
1/2 cup granulated sugar
1 cup brown sugar – not packed too hard.
3 1/4 cups AP flour – Spoon and Sweep
3/4 teaspoon Kosher salt
1 teaspoon baking powder
1/4 tsp baking soda
2 cups good quality dark chocolate chips
1 cup toasted walnuts
1 teaspoon cornstarch
1. In bowl of electric mixer fitted with paddle, cream together butter and sugars until JUST blended. Add eggs, one at a time.. and beat until well incorporated.
2. Add flour, salt, baking soda, baking powder and cornstarch and mix until just combined. Gently fold in chocolate chunks and nuts.
3. Transfer dough to clean work surface and gently mix dough by hand to ensure even distribution of ingredients. Divide into 12 equal portions, **about 4 oz each.. place portioned dough in freezer at least an hour.
Preheat oven to 375 degrees.
4. Place each FROZEN ball on sheet pan lined with parchment paper and bake in the preheated oven 16-23 minutes depending on how gooey and raw’ish you like the middles (these cookies should come out looking almost as much like a scone as a cookie in size and shape... but with a gooey cookie dough middle)
warning: these cookies are 1) addictive and 2) huge.
youll notice theres no vanilla in the recipe, cuz Levain doesnt use it. however, i like my cookies with some vanilla, so i add some with the eggs. (i wont tell Levain if you dont)
