For a couple of years I have been trying to make a porkchop like I had many years ago. The basic porkchop is just not the same. I could be eating a chicken breast for all I can tell. However, the breading is a different matter. I have used egg (yuk) and every other method. No less a chef than Dean Fearing made a comment that his mother's method of putting the flour in a brown paper bag and shaking it for some reason worked just fine. I ran a couple of tests in the last few days and even though I make a lot of things myself rather than buying them in the store, I am not about to turn up my nose on something that works. I tried the shake and bake mixture and didn't care for it but the method works just fine. Better than what I was doing. Heck, I may just throw my scrambled eggs into a brown paper bag and try that.
