Lemon Pudding Cake -- requested recipe

This results in a light souffle on top , with a lemon sauce on the bottom.

Lemon Pudding Cake
Serves 4

2 tablespoons melted butter
5-6 tablespoons lemon juice
Grated zest of 2 small lemons
1 cup sugar
1/4 cup flour
1/8 teaspoon salt
3 eggs, separated
1-1/2 cups milk
Fresh berries

Preheat the oven to 350°F. In a small bowl, stir together the melted butter, lemon juice, and zest. In a large bowl, stir together the sugar, flour, and salt. Add the yolks and then the milk and beat until blended. Beat the egg whites until stiff, but not dry, and then fold the egg whites into the other ingredients. Pour the batter into a 1-1/2 quart greased soufflé dish. Place the dish in a shallow roasting pan containing 1 inch of hot water and bake for 1 hour. Let cool 10 minutes and serve warm with fresh berries.
