Lemon Polenta Cake with Marscapone

Hi Hounds :)

After posting about my dropped and destroyed cake fiasco ("Food and the Stairs") on the "Not About Food" board, I was asked to post the recipe for the lemon polenta cake. I basically followed the recipe that someone had kindly posted on this site (don't remember who unfortunately, and a Control F search isn't bringing it up- seem to remember it was embedded into a Clementine cake thread though...sorry to be so nebulous)BUT instead of adding yogurt I added a scant half cup of marscapone and a splash of heavy cream. I also used one fresh vanilla bean, and a quick douse of Limoncello I had bought in Amalfi. Oh, and of course Meyer lemons.

The cake, if I do say so myself, was stupendous- very moist and crumbly- a taste of an early Spring. For anyone following the tale, NO! I am not above eating off my floor:) First off, we have a Three Second Rule in our home, and most of the Saran Wrap stayed affixed to the cake anyway. My carpets are fairly immaculate- even with a two year old running around. Add compulsive vacuuming and OCD to my list of "endearing" characteristics.
