On the subway yesterday overheard two bartenders talking shop. Onesays to the other that fresh lemon juice should be allowed to stand at room temp for a couple of hours for best flavor. Other readily agrees. I was hooping they'd go one to discuss other citrus juice but instead they got off at the next stop. And Hounds know anything about this?
