what to do with lemon curd?

I made a lemon curd for a pavlova (meringue roll) which flopped, and I don't have another six eggs to make another. What should I do with two cups of curd?it's too intense for me to eat it by itself. It's thick, but somewhat more gelatinous than the creamy daffodil-yellow one I've bought in jars before.

Extra points for simple, easier recipes.... TIA
