I often have leftover vegetables in the fridge. VERY often it's broccoli and yams, steamed, which is an unusual breakfast but happens to be a favorite breakfast of mine.
I've been trying to make fritters out of the leftovers. I like the taste but not the texture.
I mash the cold veggies with grated onion and hot pepper, add cilantro and breadcrumbs, and egg. I've tried to add the yolk alone, also the whole egg.
I fry the stuff in olive oil. The patties never become crispy/crunchy, they're rather mushy and break very easily.
Is there a way to get a better texture or is this hopeless?
What am I doing wrong?
Should I try a hash instead and how should I do this?
Help me if you can I'm feeling dooooowwwn....
