Leftover Serendipity

I combined leftovers with surprising results. I mixed mashed potatoes with leftover béchamel and eggs to pour over leftover chicken and caramelized onions and baked them. I expected something like a frittata. Instead, I got a very light soufflé topping. Has anyone else discovered something worth repeating when simply trying to use up leftovers?
