Last night I took a honking huge amount of salad to a dinner party. I returned home with an almost-honking huge amount of salad coated with a simple lemon vinaigrette. Adults, even those of the foodish persuasion, tend to skip the salad when there are other enticements.
This evening I sauteed the leftovers as if they were regular greens. They were delicious and I'll do this again, but I'm wondering if my fellow hounds have any other good ideas for leftover dressed greens that do not involve feeding the local opossums.
