What to do with leftover prime rib?

I'm looking for ideas for a new year's eve sit down meal. I have about five pounds left over from a standing rib roast I cooked a couple days ago. French Dip is the first thing that comes to mind, but I'm looking for something different. Something a bit less casual than a sandwich. I've made stir fry with it before, but I'm looking for something a bit more gourmet'ish.

Any ideas/recipes?
