I bought a large container of already-peeled garlic from Costco. I love the convenience! But I just don't use it that rapidly, and I end up throwing a lot in the garbage. I once tried freezing it, but the texture got ruined and it didn't taste good.
I thought about slow-roasting it in olive oil, pureeing it, then freezing it in ice-cube trays. Has anybody tried this method? Any suggestions?
