Leftover Lamb Stew?

Any suggestions for a stew made from leftover garlicky/rosemary roast leg of lamb? I'm thinking chicken or beef stock, mirepoix, potatoes, barley, maybe a little cream to finish, uh... thyme? mint? The lamb will be roasted rare, half-boned (hipbone removed).
