Leftover Crystallized Ginger

Hi there,
Long time lurker here. I have some crystallized ginger left over from late winter that's still good but I'm not sure what to do with it now that the warmer months are here. I used it for gingerbread that I make during the holidays and winter months. Any advice would be very appreciated. Thank you!
