Leftover Cornish game hen meat - any "Go To!" low carb casseroles?

Hi all - I made 10 Cornish game hens today and have about 3 pounds of leftover meat picked off the bones (half of which are in the instant pot becoming broth).

I find myself in a carbolicious stupor after today's meal and have sworn to go low-carb for the next couple of weeks as a way to start the diet I said I would start 01 January but haven't gotten "aroundtuit" just yet.

Anyone have any go-to low carb casseroles for leftover fowl? I've been reading the intertoobs for good ideas but what the Google is loading for me are all from, um, very enthusiastic low-carb aficionado websites and on review, some of these recipes don't sound all that tasty.

Of course, simply eating the meat is very low carb, but I'm looking for something the wife and the kids would find palatable.

Any thoughts?
