Yet another leftover challenge: stale foccacia

It certainly is hard to make food for one (especially bread and baked goods), so while not thinking quite right, I made a half sheet pan of foccacia. Now with about 3/4 of it either eaten or given away I'm left with not so fresh foccacia and wondering what I can do with it outside of simply eating it or making sandwiches. I hear a lot about these bread salads, but does the bread need to be very dry in order to not collapse from that liquid? Thanks for any ideas you folks may have.
