What should I do with left over soup chicken?

I always remove most of the chicken I use to make chicken soup (I like to poach a few fresh breasts of chicken in the broth for 20 or so minutes, just prior to serving it, so the meat is still tender and juicy), and am left with a large pile of small bits of stringy, dry, over-cooked chicken meat.
I've done pot-pies and curried chicken salad (with yogurt - mayonnaise and I don't get along), but I need some new inspiration. Any ideas would be much appreciated!! Thanks!
