Went to L'Echaude last night, in the Old Port district on the rue Sault-au-matelot near the rue St-paul. Admittedly, I arrived early (around 6), but I got a good seat and friendly, attentive but not obsessive, service. The chicken liver pate melted in the mouth. The sweetbreads were pan seared and served with a honey and fig reduction. Sorry, no room for desert. Brush up on your Canadian wines efore you go, or rely on the staff suggestions. L'Echaude isn't cheap, but it's far from the most expensive Quebec has to offer. A big plus: you're away from the tourist haunts in the Upper City and in the Lower City around the funiculaire and Place Royale, so it's quiet.
