Lebkuken recipe

Sorry it took so long. Non traditional but very good.

dough

1/2 c honey
1/2 c molasses
3/4 c brown sugar
1 egg
1 T lemon juice
1 t grated lemon rind
2-3/4 c flour
1/2 t baking soda
1/4 t salt
1 t cinnamon
1 t cloves
1 t allspice
1 t nutmeg
1/3 c chopped citron
1/3 c chopped nuts

glaze

1 c powdered sugar
1 T lemon juice
4 T milk (approx)

Mix honey and molasses-bring to boil and cool thoroughly. Add sugar, well beaten egg, rind, and juice. Sift dry ingredients together then add along with nuts and citron. Let stand over one or two nights in fridge. Roll to 1/4" thickness, cut into 1-2" rectangles and place on greased cookie sheet. Bake 15 min at 375F.

For glaze, add lemon juice to powdered sugar, then thin with milk. Consistency should be just thick enough to spread. Glaze tops of cookies, leaving narrow edge. Let sit until cool and glaze is hardened. Place in airtight tin or tupperware in dim cool place for two weeks to ripen.

Tip: Don't stack too many layers in container or they will stick together. Won't affect flavor, but won't be as pretty.
