Help with learning to use multi function Slow cooker

For the past year, I have been trying different recipes, for use in a slow cooker. I really do enjoy the ease of cooking chicken breast in it. However, I do have a problem.

I really don't want to use stuff like Cream of Chicken soup or Cream of Mushroom Soup when I cook chicken. I'd like to cook the chicken in some kind of marinade or liquid not involving the Cream of..." soup.

I have a 6 quart cooker that can handle 3 regular sized boneless chicken breasts. The chickens typically takes 6 hours on LOW. I am cooking for one person.

I have tried Lawry's 30 min. marinade and the salt is too much. How can I make my own marinade? Is it worth doing a dry rub? How much water or chicken broth should I use?
