Learning to Cook [Bases for Simple Dishes]

I really want to get into cooking! I have been trying to get into the habit of it since I moved to my dorm room last year. I keep trying to cook, but certain things like too many ingredients for a recipe or a bad turnout prevent me from trying again.

I think my problem is that I grew up in a culture with many spices (indian) and I have just grown accustomed to a large mixture of spices. What I would like to do is start slow and learn all the different herbs, seasonings, and spices so that I can know how to use them to make a dish taste better. I assume the best way to do this is with very basic dishes. Usually recipes have like 10+ ingredients, but I think this is the best way for me to learn to cook and actually enjoy the process of cooking.

So what do you guys use as simple bases for the following dishes:

1) Chicken [marinade, etc.]
2) Steak [marinade, etc.]
3) Eggs
4) Rice
5) Beans
6) Anything else that would serve as a good starting point
