I entertain often, but the reality is I am mostly cooking for two. Often meat, poultry, fish comes packaged for larger families than mine. My solution is to cook a meal, then turn the leftovers into something that tastes completely different for the next night. For example, the leftovers from a grilled pork loin turns into pork for a Pad Thai stir fry the next night. Ropa vieja with black beans and rice became the basis for burritos for lunch the next day. Leftover roast chicken regularly becomes part of a quesadilla. Any remaining pot roast, and juices, gets added to marinara sauce for pasta. I'm looking for other ideas?
