Can I use my Le Creuset for roasting?

TorontoJo | Nov 9, 2010 02:57 AM

I sear my beef tenderloin roast before putting it in the oven, which usually involves messing up two pans, because my roasting pan doesn't seem to like the direct heat of the stove, so I sear in a big frying pan, then transfer to the roasting pan. I'd use my cast iron skillet, but it's too small. I was wondering if I could use my 8-quart oval Le Creuset to sear and then pop the whole thing in the oven for roasting. Will the high sides prevent the roast from cooking properly?
