Can latkes be prepared ahead of time?

Tracy L. | Dec 4, 2005 01:30 PM

My friends and I are doing Hannukah instead of Christmas this year. I want to make latkes and one friend informed me that I can make the latkes ahead, freeze them and then reheat in an oven. Though I grew up eating latkes, they were a rare treat and were never made ahead of time. Is this approach to latkes doable? Or should I avoid the make ahead concept altogether and come early to my friend's house make potato pancakes before the guests arrive. I'd prefer to make them ahead of time as I have a lot of cooking and baking to do that week. Thanks
