Welcome to our Reporting Thread for our December 2019 Dish of the Month (“DOTM”). For those new to our DOTM series, the purpose of this thread is to encourage hounds to prepare the selected dish throughout the month of December 2019 and use this thread to report results, share pictures and recipes, and exchange tips and ideas.

So, what is a latke? Typically, the term is used to refer to a potato pancake made from raw, grated potatoes, that is a traditional Jewish Ashkenazi (northern European) dish made to celebrate Hanukkah. Of course, like every traditional dish, there is some backstory and controversy on the actual origins of the dish. As already addressed in the Voting thread, we are defining latkes a bit more broadly, to also include pancakes made from other root vegetables, provided that they are raw and grated. So, our dish definition includes pancakes made from grated, raw carrots, parsnips, celery roots or beets. Just to be clear, other varieties of potato pancakes – e.g., using pre-cooked and/or mashed potatoes – are outside the definition.

Her recipe differs from mine because: (a) it uses green onions, rather than a grated small yellow onion; (b) omits baking powder; and (c) omits matzoh meal or flour.
