Late February trip to Paris

Hello Everybody,,, thanks for your contributions to this board. We are going on a "budget" trip to Paris the last week of February. I thought about tagging onto recent similar discussions, but decided to post my own situation. I have been to Paris before and admit to some apprehension in making reservations and understanding menus. I will be more prepared this trip. We will be there six nights and expect to make one day trip to Chartres. We will be staying near the Pantheon. We do not drink wine, I hope that will not prove to be a problem. We like to dine early so we will be 7pm arrivals. We are not looking for a "life changing experience", we just like to enjoy new experiences in food. We do not mind being with other tourists at all.

My budget is to have two or three dinners in the 40e to 50e per person range and maybe two similar lower priced lunches. For our dinner the last night I have in mind Les Papilles. Also have in mind Aux Bon Coin. Probably a lunch at Chez Denise? At some point I would like to have steak frites and choucroute. Is there someplace where truffles would be included at that time of year? I know I cannot fit everything in.

Any suggestions? Should I make reservations on line? Or other form of making reservations? Any suggestions for a lunch in Chartres?
