My mom just wigged out and told me that she's too stressed to cook Christmas dinner this year. So my sister and I are doing it. However, there are restrictions on our menu planning - we have to cook everything *before* we show up at my mom's, and her boyfriend is vegetarian. Thus, we've decided on lasagna as our entree.
Now, I've never made lasagna before, but I assume it's not terribly difficult. And I have two or three yummy looking recipes, but they call for meat. Is it okay to follow the same recipe, but just omit the meat, or do you think that will really screw it up? If so, do you have a recipe I could use? Remember that it has to be vegetarian, and please keep in mind that my family is pretty...traditional. So no vegetable lasagna. I think we basically need meat-less lasagna. Boring as hell and in my opinion, missing the point of lasagna, but I'm hoping someone has some ideas for making it tasty!
