Las Vegas Gems

I have about 4 days in Vegas. Actually staying in Summerlin with a car, and no big plans, except a magic show or two, and visiting a random casino, and also checking out Circus Circus for a bit. Group of 5, but one is not an adventurous ethnic food eater - the other 4 will eat anything and everything. With so little time, I'm trying to narrow down some choices we'll all be happy with. I think the non-adventurous eater will be happy with Chinese food as kind of an ethnic "apex" if that makes any sense. I think I'm going to try and get them in the door of a Korean BBQ joint - I think they'd be fine.

Anyway, I'm thinking:
Memphis Championship bbq
Orchid Garden for Dim Sum
Lola for cajun
Hash House
Peppermill
Hobak (Korean BBQ)

This Biwon Korean BBQ / Sushi joint kind of has me intruiged. I know three of us can eat our weight in sushi, and I think it' be interesting to have the unadventurous eater at least SEE that sushi isn't just a bunch of raw fish on a plate with a fork. Any CH intel on Biwon?

We're not fancy ppl, we do a lot of cooking at home, so we make our fancy foods at home, and tend to be overcritical of fancy, expensive places that can't match our prowess. We tend to like dives that churn out great product. Anyone have anything along those lines that I should consider over the course of 4 days? from my limited research, I THINK I'm on track with what I have so far, just pinging the crowd
