Las Vegas Foodie Visit Recommendations

My husband and I are going to be in Vegas in about 5 weeks. This will be our third trip, but our longest stay and I am determined to make some food stop offs this time! In the past I was too confused about my location and just kind of played it by ear.
I realize that some places may be booked up already.
We are staying on the strip near Planet Hollywood.
We are planning:
Criss Angel (Luxor) or David Copperfield (MGM Grand) although I've heard some refer to Mac King as being better? (Harrahs)

Zumanity (New York New York)

We attempted exploring Fremont but were not impressed, however we may try again--so I'd love to hear "old-timey" downtown vegas recommendations as well.
