Las Vegas dining help PLEASE!

Hi all,
We're going to Las Vegas Oct 5th. for 3 nights. In my 20's and 30's we used to go every 4 months, and felt like we knew the pulse of the dining scene. Now in our late 40's it seems like we skip going to Las Vegas 5 years at a crack. The last time we were in Las Vegas, I guess it's name changed to the "New" Las Vegas. Boy did I felt like a fish out of water. We were told that we "must" go to Picasso restaurant at the Bellagio. Very underwhelming. Cavernous sized restaurant with so many tables. It felt like we were in a banquet room with no intimacy. Food was fairly good, but the courses were served far too quickly, and it was not worth the embarassing price we paid. We had a similar experience at CrafSteak in the MGM---except there the food was actually quite exceptional, which helped make up for the huge cold dining room. We're wondering if any Chowhounds know if any of the celebrity chef'ed restaurants are really worth going to. We're looking for great food of course---but also a nice atmosphere conduscive to relaxation and conversation. Years ago we've enjoyed Andres. We hear he has a new restaurant at the top of the Palms hotel. Also recommended to us was Emeril's New Orleans Fish House.
Excuze my way too long post. Would appreciate some input though.
