Help with large scale dessert

I'm chairing a fundraising event for about 150 people. Due to tragic circumstances, I am also now catering the event as well.

My current dilemma is dessert -- I would love to be able to serve an elegant dessert, either family style or individually plated. I would also really like to be able to prepare it in advance (about 10 days) and freeze it until the event. In the past, bar cookies and such have been served in this manner, but I'd really like to do something classier. I'm a successful home baker, and am not intimidated by scale, I just can't figure out what I can make and freeze and will hold up well. We have a large sized mixer and food processor, basic muffin tins, cookie sheets, etc. but don't have much in terms of specialized equipment.

It is fine if the dessert requires a bit of plating (e.g. putting a sauce that's already made on the plate and the dessert on top), but it has to be very simple as (teenage) volunteers will be doing it.

Anyone have any ideas?
