I recently made paella for the first time. It was very difficult to get the rice crispy on the bottom of the pan using my gas stovetop. The pan is also huge. 18 in across.
There are paella burners, but I don't like the idea of using a propane tank.
I was thinking perhaps an induction burner would be a solution. And obviously it would be helpful for other things around the kitchen. However, they all seem to have small cooking surfaces.
I did find one large induction burner, but it was about $300. Does anyone know if they come in a larger size that is affordable?
