For decades, my mother has been making amazing Norwegian donuts (smulteringer), cooked in melted lard. Because deep frying in a regular pot on the stove is a little precarious (and smelly), I bought her a Bravetti deep fryer this year.
However, it says you can use shortening, but not lard in the fryer. Why ever not? What's the difference?
Has anybody tried using lard in a deep fryer? (I plan to melt the lard in the microwave first).
