lard - where to get it?

kevine | Dec 2, 2004 07:02 PM

Into a real frenzy of Mexican cooking these days having just returned from there. Most good recipes use lard as opposed to oil or butter and I know for very good reasons. However even in Mexican stores I can only find those white containers of brick lard which contains hydrogenated fats. Anyone who has been keeping tabs on health related to food knows now how lethal hydrogenated fats are so I refuse to use. And indeed have read that those bricks aren't as good anyway.
So how do you find lard these days? I've asked a couple of butchers but they point me towards those bricks. Anyone know of a good butcher in East Bay/SF who reliably will sell lard or at least fat from butchered meats?

TIA
