I am starting a bit early as I'm not leaving for my trip until late November. However, I want plenty of time to pick Chowhounds' brains for good eats in L, V and C.
In Laos, we'll be spending most of our time in Luang Prabang and understand the French influence will deliver much cafe, pate and pain. But, are there other items that must be eaten? Any specifics?
Vietnam finds me in Hue and Hoi An -- I have a couple of rec's already for noodles, and of course, there's the amazing street food, but any and all chowhound rec's welcome and appreciated. The more off the beaten track, the better.
Siam Reap promises to be fairly touristed. Is there a chance for "authentic" Cambodian fare close to the temples?
Again, I do greatly appreciate any tips and will post upon my return.
