I read on the Food Pyramid that women in my age group
over 40 need 17 cups of vegetable each week. Since my husband is a strictly meat and potatoes guy who can't stand the SMELL of vegetables(really) I have to do my healthy eating at lunch at work, I've started a weekly salad ritual and made it through the first week with a 4 cup daily salad made of a variety of the following: organic salad mix, spinach, garbanzos, pear tomatoes, snow peas, carrots, green beans, sweet potatoes.
Do you have any interesting recipes for raw salads and salad dressings that are easy, delicious and transportable? Thanks in advance!
