laab at thai avenue, uptown

So we went back to thai avenue recently and had a very tasty laab, but one interesting, to me, fact was that a long with the ground prok was quite a bit of gelatinous pork skin as well as traditional ingredients. Do folks who have more experience know if the pork skin inclusion is traditional?

I still had some difficulty geting the rest of the items on the thai menu cards translated, maybe erik M. or others could try out their thai language skills on them
