LA Hound in search of SD No. Co. chow including 1 upscale meal

I'll be staying with my folks at Aviara in Carlsbad. We've eaten at Delicias, Vivace, El Bizcocho, Mille Fleur, Pampelmouse & others in the past. I'd love to find out if there's something new in the area. Have heard about Tapanade in LJ, but would like something along those lines but a little closer. Inventive cooking, soothing ambiance and will be bringing our own wine (decanting and nice stemware is highly desireable). I've found that some of the places we dined at in the past were somewhat of let-down. We did enjoy our meal at Vivace about 2 years ago, but would like something new. I've searched the previous posts back to 8/02 and found a few things. What is the word on Bistro Soliel & Amici?

Would also like to know of 2 great very low key places for great mexican, pizza or anything else you really like. Thanks in advance for all you help.
