How can "Krab" be Spelled"Crab?"

Even though, for some inexplicable, reason fake "Krab" doesn't have to be spelled differently on menus, and you have to ASK if it is real or some stupid, made-in-a-lab extruded concoction of chemicals, flavorings, artificial colors, and trash fish, they don't have to tell the truth on the menu. They spell it "crab" on the menu, like the food-like substance they serve, in some way, resembles real crab in origin--which it doesn't. This seems illegal to me or a really bad honesty policy by sushi restaurants.
Why is that?
