kosher turkey, anyone?

i started buying kosher chickens(empire) last year. the koshering process produces a moister chicken and is similar to brining, without, of course, any work. so this year i decided to order a kosher turkey, hoping for similar juiciness. my butcher didnt have a clue about the koshering effect, i asked for prices of all turkey options and when i expressed surprise that the kosher one didnt cost more his response was, 'well they are all the same'. i explained the recent fad for brining and how i was hoping to achieve the same results by buying empire. i was amazed that he knew so little about koshering. anyway, just wondering if anyone has ever bought a kosher turkey. the butcher says he sell about 25 kosher, to 400 others. am i making a mistake? joan
