Korean BBQ Accompaniments?

This weekend I made some Kalbi on the grill at home, and I was reminded of a few items that I have had at restaurants that I want to incorporate in the future.

On many occasions I have had BBQ served with a sort of scallion salad with a tangy, citrus-garlic flavored dressing. The scallions are typically sliced very thin into curly tangled bits. Anyone know what I'm talking about and/or have a recipe?

Also, I had some purple perilla aka shiso leaves around, so I picked out some larger one and used them for wrapping as an alternative to lettuce. I seem to recall seeing larger, less purple leaves that I have been served before with BBQ. Any ideas?

Finally, I have had sliced mushrooms grilled along with the meat. Are these shitakes?
