Knives - Knife Quality vs. Sharpening Method?

I am thinking of giving a couple water stones as a gift to some people, but I don't know precisely what sort of knives they have--material, provenance, etc--although I would guess they're 'middle-of-the-range', whatever that means.

So I'm wondering is how important are the knife construction and metal, assuming good sharpening technique. Will it be possible to get a good edge with the stones? Or is it a bit of a mismatch to use a 6000 grit stone for an everyday knife?

I'm a bit new to knife 'nerd-ery', so surely any experience is helpful!
