Need a Knive Set Recommendation for an Amateur Chef

We have a set of Wusthof Knives which we have had for about 20 years. Probably paid about $200 for them with the block. It's time to upgrade. My wife and I both enjoy cooking although she does the majority of it. She is constantly chopping vegetables and fruits and I utilize knives for grilling and trimming meats and fish. We'd like a complete matched stet of 6-8 knives that I could sharpen myself as needed. We were looking at Wusthof again but Williams Sonoma was recommending a set of Shun-Kaji. They had a Shun Premier 9 piece set for $900. Also for less is the Shun Classic set a 6 pc set for $400.

As I started doing research on this site I was also reading about Tojiro.

Can someone help by explaining what I should look for in a everyday knife and recommend a set of knives in the $600 to $1000 range.
