this is a bit indirectly related to what it usually talked about here, but i'm looking for a good knife sharpener. we have a set of hinckels knives and i haven't sharpened them for quite awhile. i have a steel that i use, but after awhile that only does so much. which is better, sharpening stone or the device that you pull the blade through? i also have a global chef's knife, which is a much thinner blade. what works best to sharpen it?
