Can you help this knife newbie?

I have been using cheap knives my whole life. I want a set of good quality knives, but I don't know ANYTHING about knives and I am not satisfied with basing my decision off Amazon reviews. I am in the kitchen a good bit. We are a plant based family so I am frequently (as in more than once a day) chopping vegetables, sometimes fruit. I would love something that will chop tomatoes without squishing them and cut through raw potatoes without putting my full weight on the knife. Open to any suggestions, but would prefer a price tag that won't break the bank. A set under $200 would be nice.
