I just realized that I have four utility knives and I am lusting for a fifth. Yeah, this is nuts. But it took me a decade to get here.
In general I actually have been making small progress at downsizing, getting rid of kitchen wares I don’t use. That’s what is prompting this post. I plan to get rid or replace some of these kitchen utility knives. Seeking outside opinions and reasonings. Not quite sure which direction I am going.
What size is/are your kitchen utility knive(s)?
Mine two favorites are each 6”. The two disfavored are 5” and 7”.
What shape? Wide like a mini chef knife for knuckle clearance during board work or narrow like an elongated paring knife for in-hand work?
All of mine are more narrow, except one quasi-Japanese knife, let’s say it’s Japanese inspired but not the real thing, more in the spirit of a nakari despite being labeled as a kiritsuke.
Curved or straight belly? Mine are all straight but my current lust has some curve to the belly. It’s a very wide mini chef knife.
Why, for each attribute?
Pure chance for me, until now, but only because I’m am starting to think about it. I do use them for board work some of the time.
