Kitchen Cart for Counter Height?

I'm 6'2", and I just realized my countertops are a measly 35", which explains why knife work always leaves me with a sore neck, back, and shoulders. Experimenting with a stack of cutting boards suggests I'd be happiest with a 40" high cutting surface. There's not a whole lot of opportunity to tweak the existing counters that I can see, as it's one huge nearly seamless "L" of granite, and it was remodeled recently by prior owners so I'd hate to start all over.

One idea I had was to build a small kitchen cart with a custom height, and use that as my core cooking prep surface. It would be a little bit awkward in the kitchen as we already have an island, but it seems far simpler than renovation. Anyone done anything like this? Were you satisfied, can you share any tips?
